From the Farmers Market to our homes, we always remember the home made goods with a cup of tea. One traditional Northern Irish baker from Dungannon is still making these cherished memories happen across the country.

We caught up with Linda Haydock of Linda’s Bakery who provides traditional home baked cakes using only free range eggs including boiled, apple fruit, madeira, ginger, rhubarb chocolate, coffee, Victoria and delicious chocolate fudge cakes, a wide selection of traybakes including caramel squares, clementines, Diana delights, raspberry ruffles, lemon or orange delights and peppermint or orange crunchies, rocky road squares, teaser crunch and toffee crispier. The list goes on…

Q:  What makes your product unique?

A: All my products are hand-made from scratch using whole ingredients and no ready-mixes or additives or preservatives.

A: I use very local free range eggs in my cakes and Loughgall Bramley apples in my tarts. Everything else is sourced at the best price for the best quality ingredient.

Q: What inspires you as a producer?

A: I just love baking! It’s as simple as that.

Q: How did you get started?

A: I had always baked for the family and in the late 90’s I started selling our own free range eggs at Cookstown Country market, where I was asked by the chairman of it if I could bake. I had never thought my baking was good enough to actually sell but I gave it a go and selling just gave me such encouragement. I then started selling at Tyrone Farmers market in Dungannon and it simply snow-balled to the extent that I just couldn’t bake enough in my own kitchen. Hence the need to build Linda’s Bakery , on our farm.

Q: Why do you think it’s important to keep local?

A: It’s the traditional way and it keeps the money in the local economy.

A: I am a perfectionist so I wouldn’t expect anyone to buy something that I wouldn’t buy or eat myself. I know I am my own worst critic!

Q: Where can we buy your products?

A: Mostly at Farmers markets, craft fairs, food fairs and agricultural shows. Also small local shops.

Q: What food best compliments your product? Or what is your favourite way of using your product?

A: Apple tart and cream or warm chocolate fudge cake and ice-cream.

‘I bake traditional cakes eg Boiled cakes, Apple fruit cakes, Lemon drizzle cakes, Ginger cakes, chocolate, coffee , Victoria, chocolate fudge cakes, approximately 14 varieties of traybakes, shortbread, wheaten bread , apple tarts, rhubarb tarts and mince pies.’
